The Kit.

Did someone famous where the jerseys on your wall? Nope.

We have worked with some generous sponsors over the years. With new sponsors come new logos, designs and inevitably the new kit. So many great memories are tied up in each version of our team jersey. I would rather be reminded of my own memories in the sport then hang a signed Armstrong Lemond jersey on the wall. One of the most alluring things about the sport to me is that anyone can participate in the ‘knife fight’. A working stiff can experience similar sights, sounds and emotions. Sure it’s on a much smaller scale but the essence and principles are the same. The kit is part of the visual pageantry that makes bicycle racing beautiful.

First hand-me-down.

Deb, thanks for asking. Here are the cooking instructions from Paige.

Yes….I think there’s a recipe for it in the blue/green binder over the fridge. But really, here’s the gist:

Sauté 4 diced gloves garlic in oil on low for a minute in a pot
Add one can of whole tomatoes and their juices (Red Gold brand is best)
Take your kitchen shears and cut the tomatoes – think, hearty bite sized….but not uniform.
Turn the heat up to medium, just so the juice bubbles a bit – not even a rolling boiling
Add salt and pepper to taste
Add your choice of herbs/spices – Some options are:
· Canned Adobe chillies – make sure to remove the seeds, dice, and really two will do the trick and three will light your mouth on fire!
· Curry powder – be generous. Maybe ½ Tablespoon…you can keep adding if the flavor is not strong enough.
· I’m sure you could even do jalapenos if that’s what you have in the fridge….i would just sauté them a bit before you put in the garlic.
And if it gets too thick, you can add in ¼ cup of white or red wine. I mean really….just use your imagination.
Let the tomatoes simmer for about 20 minutes. They should get a little bit thick.
Reduce heat to low

Now you want to basically poach the eggs in the tomato sauce.
Make 4 little divots with the back of your ladle and crack the eggs into those divots
Put a lid on the pot and let it simmer for 5-10 minutes
Just keep checking on it until the whites are done to your liking – you can ladle the sauce over them to speed up the cook time.
You want to make sure the yolks are still runny. Yum! Plus, it will all keep cooking even after you plate it up.

Serve in a bowl
We like to top ours off with sautéed mushrooms, crispy bacon, and just a bit of parmesan cheese.
But you could do cilantro, sour cream….whatever sounds good to you.
And don’t forget the Naan. Walmart Supercenter sells some great naan in their bakery – all you have to do is put it in the oven for 10 minutes.

This serves 2 very hungry people. Could easily serve 4 if you had a salad with it.
